Emmelia pine honey is produced in the end of the summer , on one more trip to Evia’s pine forests!

Pine honey is a typical honeydew of the Mediterranean produced by the insect Marchalina hellenica. It represents 60% of the total honey production in Greece.

It is thick and crystallizes very slowly as it has a low sugar content. It has high concentrations of trace elements and minerals, such as calcium, magnesium, zinc and iron.

Its characteristics are the reddish brown color, and the spicy aroma of malt. It tastes slightly caramelized.

 

Few words about honeydews ..

When bees create honey from trees, they do not start with the sweet nectar that is gathered by flower flowers. On the contrary, they create this unique honey with another sweet substance called honeydew, which is produced by aphids. This sweet substance is a natural product of waste that is secreted by aphids as a by-product of the consumption of vegetable pellets. Aphids eat juice not so much for sugars but also for the amino acids they contain. This means that most of the sugars are excreted from aphid as a honey, a substance that bees love.

Honey from honeydew is chemically different from nectar honey. It is usually darker with a higher inorganic content and has a stronger taste and especially nutritional benefits. It is well known in Europe. In Greece pine honey holds over 60% of total production.
